Creamy Avocado Salad Dressing
I find it easy to get bored with eating salads at home; however, I find that with a snappy dressing I keep coming back for more. A colorful salad is a wonderful way to get a lot of fresh produce into your diet and you feel so good afterwards!

I looooove creamy salad dressings (e.g. ranch, blue cheese) but am mostly plant-based nowadays so have found different ways to make creamy non-dairy versions. This one is a yummy avocado dressing that had my bread-and-cheese-loving 8 year old exclaiming, "Yummy! Salad!"
You can change this up a lot with different fresh herbs. I always have parsley as a staple but it's also delicious with fresh cilantro for a Mexican style dressing, etc. This can also be used as a dip for fresh cut up vegetables.
Recipe
Ingredients
1 medium avocado
1 tsp dijon mustard
1/2 (juice of a) lemon
1/4 - 1/2 tsp sea salt (to taste)
1/2 cup olive oil
1/4 cup water
1/2 cup fresh parsley
2 cloves garlic
Fresh ground pepper, to taste
Optional - add additional fresh herbs
Want extra creamy?! Add to the above and additional 1/4 cup water and 1/4 cup raw cashew nuts. SO DELISH.
Place all ingredients into a blender. Blend well and then mix into salad.
